Description

Rich and velvety tomato soup with a hint of basil and cream, perfect for cozy lunches or pairing with grilled cheese sandwiches.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups canned crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Optional: swirl of cream for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until translucent and fragrant.
  2. Add crushed tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender to puree the soup until smooth. Or carefully transfer in batches to a blender.
  4. Stir in heavy cream and chopped basil. Heat through but do not boil.
  5. Season with salt and pepper. Serve hot with an optional swirl of cream.
